Written after the harvest
Our kitchen works from the field back to the plate, and the farms set the pace.
Produce comes from farms within 60 miles of the kitchen. When a farm has its greens, roots or first tomatoes ready, we know it, and the menu is written around what is in hand.
Once it arrives, the cooking stays close to the ingredient. We use fire, salt and a light hand, so the vegetables taste of the week they were picked.
